Ingredients
- 18 g espresso beans, ground fine
- 36 mL double espresso shot
- 120 mL hot water (just off the boil)
Method
- Draw 120 mL of hot water from the kettle or group head into a 180 mL cup.
- Swirl briefly to warm the cup, leaving the water in.
- Pull a double espresso shot (18 g in, ~36 mL out) directly on top of the hot water.
- Pouring the shot onto the water (not the reverse) keeps the crema intact.
- Do not stir. Serve black, allowing the drinker to taste the crema first.
